One of My Favorite Clean Meals – Baja Chicken


I came across this recipe in Oxygen Magazine. It has become one of my favorite go to clean meals that I can easily take to work for lunch.  It has all of the macronutrients (protein, fat carbs) in one healthy dish. I also like to add different spices to make it more spicier. If you have some Chipotle Chili Powder, sprinkle some on top to add a lil spicy kick. If you’re a vegetarian you can still tailor this meal to fit your dietary needs.  Try it and let me know what you think.


4 oz chicken breast chopped into small pieces

½ small red onion, chopped

1 small clove of garlic, chopped

2 tsp olive oil

¼ cup brown rice

¼ cup black bean, rinsed

1 tbsp salsa

¼ tsp black pepper

¼ cup reduced fat shredded Monterey Jack cheese (try Sargento Mexican blend)

Cilantro leaves, chopped


  • Heat oil in skillet over medium-high heat. Add chicken, onions and garlic. Cook until golden brown.

  • In a bowl, mix brown rice, black beans, salsa, and pepper.

  • Place chicken over rice blend. Top w/cheese and garnish with cilantro.
